Chicken Bok Choy Sauté

Makes Two Servings

INGREDIENTS

6 Cups Bok Choy

1 Clove garlic pressed

2 tbsp coconut oil

2 skinless chicken breast, diced

3 tbsp low-sodium chicken broth

1 tbsp fresh lemon juice

1 tsp low-sodium soy sauce

Salt and Pepper to taste

1 tbsp grated ginger

2 tbsp toasted sesame seeds

Chop Bok Choy and toss with garlic in a bowl. In a wok or nonstick cooking pan, add 1 tbsp oil and sauté the chicken for 3 minuets. Add the remaining tbsp of oil, the bok choy, and the rest of the ingredients (except the sesame seeds). Cook on medium-high heat for 4 minutes, Sprinkle sesame seeds on and enjoy.
